Let's Press Pause

There's no doubt that this is a stressful time for all of us. It's easy to get overwhelmed by the news, our many obligations, fear and anxiety. Let's take a moment to press pause - slow down, relax, laugh, learn something new, or just enjoy the world around us. Here's my go to keto treat these days:

Keto Pizza Chaffle
1. Start with a Mozzarella chaffle (see recipe below)
2. Top with 2 tbsp low carb tomato sauce (I make my own, but you can buy it premade), 6 slices of Hormel pepperoni, and ¼ cup of mozzarella.
3. Place under broiler for 2-3 minutes and enjoy!

It takes less than 10 minutes and I promise you will not feel deprived!

Mozzarella Chaffle:
½ cup mozzarella
1 egg
Pinch garlic powder
Pinch Italian seasoning

Mix all ingredients well and spoon into a waffle iron till done. Voila! (I usually make 4-6 at a time.)
